  • 4 Pre-Sliced Everything Brioche Buns, toasted
  • 4 salmon fillets (about 5 ounces each)
  • 1 tablespoon unsalted butter, melted
  • 1 1/2 teaspoons Cajun seasoning
  • 4 slices thick-cut applewood smoked bacon
  • 1 garlic clove, minced
  • 1/4 cup avocado oil mayonnaise
  • 1 1/2 teaspoons chopped fresh dill
  • 1 teaspoon orange zest
  • 1/2 teaspoon ground black pepper
  • 4 leaves Boston lettuce
  • 4 slices tomato
  • 1 avocado, peeled, pitted and sliced

Directions

Preheat oven to 425°; line rimmed baking pan with parchment paper. Place salmon, skin side down, on prepared pan; brush with butter and sprinkle with seasoning. Bake salmon 8 minutes; turn broiler to high. Broil salmon 3 minutes or until blackened and internal temperature reaches 145°.

In large skillet, cook bacon over medium heat 10 minutes or until crisp, turning occasionally; transfer to paper towel-lined plate to cool. Cut crosswise in half.

In small bowl, stir garlic, mayonnaise, dill, zest and pepper. Makes about 1/4 cup.

Slip spatula between salmon skin and flesh to remove skin. Spread bottom buns with mayonnaise mixture; top with lettuce, tomato, avocado, salmon, bacon and top buns. Makes 4 sandwiches.
