Open-Faced Avocado Tuna Melt
- 4 slices Brioche Gourmet Sliced Brioche Loaf
- 1 large avocado, peeled and pitted
- 1 can (12 ounces) chunk light tuna in water, drained
- 2 tablespoons chopped celery
- 2 tablespoons chopped red onion
- 1 tablespoon fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 4 large tomato slices
- 4 slices reduced fat Swiss cheese
DIRECTIONS
STEP 1
Place oven rack 6 inches from broiler; preheat broiler to high. Place bread on rimmed baking pan; broil 2 minutes, turning once.
STEP 2
In medium bowl, mash avocado with fork until almost smooth; stir intuna, celery, onion, lemon juice, salt and pepper. Makes about 2 cups.
STEP 3
Top bread with tuna mixture, tomato slices and cheese; broil 2minutes or until cheese is melted. Makes 4 tuna melts.
