Cowboy Butter Steak Sliders
- 1 package Brioche Gourmet Brioche Rolls, sliced horizontally
- 1/4 cup plus 3 tablespoons unsalted butter, softened
- 1 large yellow onion, halved and thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 garlic cloves, minced
- 1 tablespoon cowboy seasoning and rub
- 1/2 tablespoon chopped fresh parsley
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1 tablespoon olive oil
- 2 pounds boneless sirloin steak, cut into 1/2-inch pieces
- 6 slices aged white Cheddar cheese, quartered
DIRECTIONS
STEP 1
Prepare outdoor grill for indirect grilling over medium heat; line large rimmed baking pan with aluminum foil. In large skillet, melt 1 tablespoon butter over low heat. Add onion, salt, pepper and 2 tablespoons water; cover and cook 10 minutes. Uncover; cook 15 minutes or until very tender, stirring occasionally. Makes about 1 cup onion mixture.
STEP 2
In medium bowl, stir garlic, 1/2 tablespoon seasoning, parsley, mustard, lemon juice, Worcestershire sauce and remaining 6 tablespoons butter. Makes about 6 tablespoons cowboy butter.
STEP 3
Reserve 2 tablespoons cowboy butter. In large skillet, heat oil over medium-high heat. Add steak and remaining 1/2 tablespoon seasoning; cook 3 minutes or until browned, stirring occasionally. Remove skillet from heat and carefully drain drippings from skillet; stir in remaining 4 tablespoons cowboy butter. Makes about 4 cups steak mixture.
STEP 4
In small microwave-safe bowl, heat reserved 2 tablespoons cowboy butter in microwave oven on high 15 seconds or until melted. Place bottom rolls, cut side up, on prepared pan; top with steak mixture, cheese, onion mixture and top rolls, cut side down. Brush tops of rolls with melted cowboy butter; place pan on hot grill rack over unlit side of grill, cover and cook 10 minutes or until cheese is melted. Makes 12 sliders.
