Cheesy Mushroom Croque

- 8 slices of Sliced Brioche Loaf
- 250 g mushrooms (button, shiitake, oyster, etc.)
- 1 medium onion, finely chopped
- 150 g grated cheese (Emmental, Comté, Cheddar…)
- 30 g butter
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (or thyme, chives)
- Salt & pepper to taste

Prepare the filling
Heat the olive oil and 10 g of butter in a pan.
Add the chopped onion and sauté until translucent.
Add the sliced mushrooms and cook for 5 to 7 minutes, until tender and golden.
Stir in the herbs, season with salt and pepper, then remove from heat.

Assemble the croques
Lightly butter the outside of each brioche slice with the remaining butter.
On 4 slices, evenly spread the mushroom-onion mixture.
Sprinkle grated cheese over the filling.
Top with the remaining 4 slices (buttered side facing outward).

Cooking
Heat a pan over medium heat.
Cook each croque for 3 to 4 minutes on each side, until the brioche is golden and crispy, and the cheese has melted.
