Brioche Lobster Rolls

  • 4 Brioche Hot Dog Buns
  • 2 cups cooked lobster meat (from 2 to 3 fresh lobsters or 4 frozen lobster tails)
  • 1/4 cup mayonnaise
  • 1/4 cup thinly sliced scallions
  • 1/4 cup finely chopped celery
  • 2 tablespoon chopped fresh parsley, optional
  • 1 teaspoon fresh lemon juice
  • Salt and pepper, to taste
  • 3 tablespoons melted butter

DIRECTIONS

STEP 1

Pull apart the cooked lobster meat into bite-sized pieces and place in a bowl. Stir in the mayonnaise, scallions, celery, parsley (optional) and lemon juice, and season to taste with salt and pepper.


STEP 2

Brush the insides of the brioche hot dog buns with melted butter and toast until lightly golden.


STEP 3

Spoon 1/2 cup of the lobster salad mixture into each hot dog bun and serve immediately.
