Vegan Avocado-Chickpea Salad Sandwiches

  • 6 Brioche Gourmet Plant-Based Croissants
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup slivered almonds
  • 1 small avocado, peeled and pitted
  • 1/4 cup vegan mayonnaise (optional)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh cracked black pepper
  • 2 green onions, thinly sliced
  • 3/4 cup halved red grapes

DIRECTIONS

STEP 1

In food processor, pulse chickpeas and almonds until small chunks remain.


STEP 2

In large bowl, with back of fork, mash avocado until almost smooth; stir in mayonnaise, if desired, mustard, salt and pepper. Fold in onions, grapes and almond mixture. Makes about 3 cups “chicken” salad.


STEP 3

Serve “chicken” salad in croissants. Makes 6 sandwiches.
