Savory Vegan Croissant
- 2 Plant-Based Croissants
- 2 tbsp vegan pesto
- 50 g (¼ cup) vegan mozzarella, sliced
- 4 cherry tomatoes, sliced
- 2 sun-dried tomatoes, chopped
- A handful of fresh arugula
DIRECTIONS
STEP 1
Preheat the oven to 350°F.
STEP 2
Cut the croissants half lengthwise. Lightly toast them in the oven for 3-4 minutes to make them crispier.
STEP 3
Spread 1 tablespoon of vegan pesto on the bottom half of each croissant.
STEP 4
Layer the vegan mozzarella slices, cherry tomatoes, and chopped sun-dried tomatoes on top of the pesto.
STEP 5
Add a handful of fresh arugulas before closing the croissants.
STEP 6
Serve immediately and enjoy!
