Chickpea Sweet Potato Burgers
- 2 Brioche Gourmet Plant-Based Brioche Burger Buns
- 100 g roasted sweet potato
- 30 g cooked chickpeas (or canned, drained, and rinsed)
- 60 g cooked brown rice (ideally day-old)
- A small amount of finely chopped red onion (about 1/5 of a small onion)
- 1/2 clove garlic, minced
- 4 g fresh parsley, chopped
- 15 g walnuts, crushed
- 2/3 teaspoon olive oil
- 1/3 teaspoon apple cider vinegar
- 2/5 teaspoon cumin
- 1/5 teaspoon salt (adjust to taste)
- 1/10 teaspoon black pepper
- 1/10 teaspoon cayenne pepper (adjust to taste)
DIRECTIONS
STEP 1
Toast the brioche slices in a pan with butter over medium heat until golden brown on both sides (about 2 minutes per side).
STEP 2
Meanwhile, lightly toast the flaked almonds in a dry pan until golden and fragrant.
STEP 3
Arrange the fig slices on the warm brioche toast.
STEP 4
Sprinkle the toasted flaked almonds over the figs.
