Chicken Brioche Rolls

  • 8 Brioche Rolls
  • 2 tbs olive oil
  • 250ml garlic aioli
  • 100g red cabbage (shredded)
  • 8 small chicken patties
  • 8 slices cheddar cheese
  • 1 red onion (sliced and grilled)
  • 2 tomatoes (sliced)
  • 8 pickle slices

DIRECTIONS

STEP 1

Heat oil in a large shallow frying pan over medium heat.


STEP 2

Add chicken patties and cook for 5-7 minutes, turning occasionally, until golden and cooked through. Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.


STEP 3

While the patties are cooking, lightly toast the Brioche Rolls under a grill, cut side up, for 1-2 minutes until golden.


STEP 4

Assemble the burgers by spreading a generous spoonful of garlic aioli on the bottom half of each Brioche Roll. Then add shredded red cabbage, a chicken patty, grilled onion slices, tomato slices, and a pickle slice. Finish with the top half of the Brioche Roll.
