Air Fryer Cajun Shrimp Po’ Boys
- 1 lb large shrimp, peeled and deveined
- 2 eggs
- 1/4 cup whole milk
- 1/2 cup plain breadcrumbs
- 1/2 cup cornmeal
- 1 tbsp Cajun seasoning
- Nonstick cooking spray
- 4 Brioche Gourmet Pre-Sliced Brioche Hot Dog Buns
- Iceberg lettuce, shredded
- Tomato slices
- Kosher dill pickle sandwich slices
- Remoulade sauce
DIRECTIONS
STEP 1
In a shallow bowl, whisk together the eggs and milk.
STEP 2
In a separate bowl, combine breadcrumbs, cornmeal, and Cajun seasoning.
STEP 3
Dip each shrimp in the egg mixture, then coat in the breadcrumb mixture.
STEP 4
Sprinkle the toasted flaked almonds over the figs.Place coated shrimp on a tray or in the air fryer basket and lightly spray with nonstick cooking spray.Sprinkle the toasted flaked almonds over the figs.
STEP 5
Air fry at 400°F (200°C) for about 8–10 minutes, or until golden and crispy.
STEP 6
Meanwhile, lightly toast the Brioche Gourmet Hot Dog Buns.
STEP 7
Assemble the Po’ Boys: spread remoulade sauce on the buns, then layer with lettuce, tomatoes, pickles, and crispy shrimp.
STEP 8
Top with an extra drizzle of remoulade. Serve immediately.
