Peach, Salami & Tomato Panzanella Salad
- 4 slices day-old Brioche Gourmet Sliced Brioche Loaf
- 2 peaches, halved and pitted
- ¼ cup plus 1 tablespoon olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons chopped fresh basil
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 6 slices hard salami, cut into 1/2-inch pieces
- 2 Roma tomatoes, chopped
- 1 cup packed baby arugula
- ¾ cup 1/2-inch cubed mozzarella cheese (about 3 ounces
- • ¼ cup thinly sliced red onion
DIRECTIONS
STEP 1
Prepare an outdoor grill for direct grilling over medium heat.
STEP 2
Brush both sides of the bread slices and the cut sides of the peaches with 2 tablespoons of oil.
STEP 3
Place bread slices and peaches (cut side down) on the hot grill rack. Cover and grill:
Peaches: about 5 minutes total, turning once, until grill marks appear.
Bread: about 2 minutes, turning once, until grill marks appear.
STEP 4
Transfer the grilled bread and peaches to a cutting board.
Cut bread into 1-inch pieces.
Quarter each peach half lengthwise.
STEP 5
In a small bowl, whisk together the vinegar, basil, salt, pepper, and the remaining 3 tablespoons of oil.
STEP 6
In a large bowl, toss together the salami, tomatoes, arugula, cheese, and onion.
Gently fold in the grilled bread and peach slices.
Drizzle the salad with the vinaigrette and toss to combine.
Makes about 7 cups.
