Irish Grilled Cheese with bacon
- 8 slices of Brioche Gourmet Sliced Brioche Loaf
- 8 slices thick-cut bacon
- 1 cup sour cream
- 2 tablespoons thinly sliced green onion
1/2 cup Irish unsalted butter, softened - 1 tablespoon finely chopped fresh parsley
- 2 cups shredded Irish white Cheddar cheese
- 1/2 cup coarsely crushed kettle-style potato chips
DIRECTIONS
STEP 1
Preheat oven to 400°; line rimmed baking pan with aluminum foil. Place bacon in single layer on prepared pan; roast 20 minutes or
until crisp. Transfer bacon to cutting board; cut crosswise in half.
STEP 2
In medium bowl, stir sour cream and onion. Makes about 1 cup sour cream mixture.
STEP 3
In small bowl, stir 1/4 cup butter and parsley. Makes about 1/4 cup butter-parsley mixture.
STEP 4
Spread 1 side of bread slices with remaining 1/4 cup butter. Turn bread slices and spread with butter-parsley mixture; top with half
the cheese, bacon, potato chips, and remaining cheese and 4 bread slices, butter-parsley mixture side down.
STEP 5
In 2 batches, heat large skillet over medium heat. Add sandwiches; cook 6 minutes or until bread is golden brown and cheese is
melted, turning once and pressing down occasionally with large spatula. Makes 4 grilled cheeses.
STEP 6
Cut each grilled cheese in half; serve with sour cream mixture for dipping.
