Brioche Lobster Rolls

Prep Time

Succulent lobster meat is tossed with mayonnaise, lemon juice and fresh herbs and piled high in a toasted buttery brioche bun. Enjoy with potato chips or French fries!


  • 4 Brioche Hot Dog Buns
  • 2 cups cooked lobster meat (from 2 to 3 fresh lobsters or 4 frozen lobster tails)
  • ¼ cup mayonnaise
  • ¼ cup thinly sliced scallions
  • ¼ cup finely chopped celery
  • 2 tablespoon chopped fresh parsley, optional
  • 1 teaspoon fresh lemon juice
  • salt and pepper, to taste
  • 3 tablespoons melted butter


1. Pull apart the cooked lobster meat into bite-sized pieces and place in a bowl. Stir in the mayonnaise, scallions, celery, parsley (optional) and lemon juice, and season to taste with salt and pepper.

2. Brush the insides of the brioche hot dog buns with melted butter and toast until lightly golden. Spoon ½ cup of the lobster salad mixture into each hot dog bun and serve immediately.
